Mexico: Chicken Fajita Quesadillas

This post is slightly delayed – I apologise. I’m back in my flat in Johannesburg and I don’t have access to Internet on my pc which makes it slightly more difficult to post.

I’ve been reprimanded by Tom for the delay though. He asked if I had posted today and I said I was still getting there. His response: “You better. Didn’t write for nothing!” And I must agree. I was chuffed when he sent me his recipe write up earlier. I have posted his comments after the link to his recipe. (I’ll lay the blog out properly again once I have proper internet access.

This is what he has to say about the recipe and cooking experience:

“A lot of decision making had to go into this weeks meal, mainly because its quite difficult living in a house where the one person eats basically nothing, and the other doesn’t eat carbs. As we all know, a lot of Mexican food is based around carbs. I managed though to find a Mexican beer, and then cauliflower wraps to replace the usual tortillas.

I followed the recipe for the most part, replacing Fajita spice with a chilli spice, and when adding the green and red peppers i also added 4 jalapenos from my garden, along with a pepper i like to call a “Habadew” my pepperdew plant and my habanero have cross pollinated.”
